Its another day to try something new, something healthy and something yummy. While on your weight loss journey, it is important to eat more protein and less carbohydrate. Today we are combining two top proteinous food in a healthy dish. Just thinking about it makes my mouth water. Healthy Africhen presents beans and plantain pancakes aka PLANKARA.

Plankara is made from beans and plantain. Plankara can be made using beans flour or purée and plantains. Beans flour can easily be made at home by grinding dried peeled beans into flour. If you do not have beans flour, you can make your beans purée by soaking the cleaned beans and removing the skin. When you have washed the white bean shells, place it in a blender with onions, water and any other ingredients of your choice. Blend it until it becomes smooth to get the beans purée, for this recipe I will make use of beans flour.

1 cup of beans flour
2 overripe plantains
2 eggs
1/2 cup of milk
1/2 teaspoon of salt
1/2 teaspoon of dried pepper
1/2 cup of water
Olive oil for frying (any other oil can be used)
1) Wash and peel the plantains.
2) Place them in a bowl and use a fork to mash it into a thick paste.
3) Mix the eggs with the milk and gradually add it to the plantain paste.
4) Add the beans flour to the plantain paste and mix until smooth.
5) Add water if the mixture is too thick.
6) Add the salt and pepper and mix.
7) Pour 1/3 cup batter into a frying pan over medium heat.
8) Fry it until the edges are dry and bubbles appear, use a spatula to flip the pancakes and allow it to fry fully.
9) Fry until golden brown on both sides and remove from the heat.
10) Serve and enjoy.
